Gabriel has been a junior stylist at American Vintage for two and a half years. When we asked him to share his favourite recipe with us, he didn’t hesitate for a second: it would be his yoghurt cake with vanilla and dark chocolate. “It’s a recipe that my older sister prepared almost every Sunday at home. The recipe was written down on a little piece of paper slipped into a cookbook. It was nothing fancy, but, for me, it was always special. I can still smell that sweet scent of vanilla filling the kitchen. It instantly takes me back to my childhood, when we were all sitting around the table at snack time. And, of course, we almost always washed down this cake with a few glasses of Coke. Today, I like to prepare it for birthdays at the office. It’s always nice to treat my colleagues to something delicious,” he explains.

Ingredients

2 pots plain yoghurt
2 pots flour
1/2 pot sugar
1/2 pot oil
1 drizzle vanilla syrup
1 packet baking powder
1 tablet 70% dark chocolate

Preparation

1 — Preheat the oven to 180°C.
2 — Pour two pots of yoghurt into a large mixing bowl. Keep one of the pots to measure the other ingredients. Add the sugar and stir until the batter is smooth and even.
3 — Gradually add the flour and packet of baking powder. Mix gently to avoid forming lumps.
4 — Add a drizzle of vanilla syrup. Mix well.
5 — Add the oil.
6 — Break the tablet of dark chocolate into small pieces to make chocolate chips and add them directly to the preparation.
7 — Pour the mixture into a buttered and floured cake pan. If you like, add a few squares of chocolate on top.
8 — Bake for about 30 minutes. To check if the cake is done, insert a knife in the centre: it should come out dry or only slightly damp.
9 — Let cool.

A tip when making this recipe at home? “For a sweet finishing touch, I make a vanilla sugar syrup and ice the cake with it for an extra-moist result.”
