AMV recipes: Helen Wall’s orange-carrot soup and garlic bread

Helen Wall has been working at American Vintage for over 10 years now. Our Import Business Developer shares her comforting winter recipe with us – to tweak as you wish.

“This recipe was handed down from my mother. It’s really comforting, perfect after a long walk or on a misty autumn morning. I generally like it even more after getting some exercise in – running or surfing, for example. I often invent my own recipes. I really prefer cooking with ingredients that I choose myself. When I go grocery shopping in the United States, I discover new products that spark new ideas.”

ORANGE-CARROT SOUP AND GARLIC BREAD

“The last time I ate this orange and carrot soup, I was in the U.K. At dawn, I went jogging along the beach. After brunch, I left for Saltburn-by-the-Sea to do some surfing. It’s a very complete sport and, after being whipped around by the bone-chilling North Sea, I found the soup and garlic bread even more comforting.”

Ingredients (for 4 people) 

For the soup
1 kg carrots
1 onion
3 branches celery
1 litre bouillon
Juice of 1 big orange
1/2 tsp nutmeg
1/2 tsp paprika
1 tsp ground coriander
Salt and pepper

For the bread
1 baguette
Butter
1 large garlic clove
Herbes de Provence

Preparation

1 — Cut the onion, carrots and celery. Sauté them in a little butter and olive oil for 10 minutes.
2 — Add the bouillon and spices. Simmer for 30 to 40 minutes. Allow to cool slightly.
3 — In the meantime, melt the butter and add the minced garlic.
4 — Cut the baguette in half and brush with the garlic butter.
5 — Wrap in parchment paper and warm in the oven at 180°C (356°F) for 10 to 15 min.
6 — Mix the soup (if you wish).
7 — Adjust the orange juice (and rewarm the soup if necessary).
8 — Add crème fraîche and coriander to garnish.

Helen’s tip: To enjoy in a warm jumper and, for chilly eaters, a blanket on your lap. Comfort guaranteed.
