Let’s fly to New York and test the new discipline that’s all the rage at the moment: Soul Cycle.

Here’s a recipe to prepare vegetable-protein hamburgers for 4 people.

To make the patties, you need: 1 carrot, 240 g cooked red kidney beans, a handful of shelled walnuts, 1 tsp miso, a dash of paprika, ½ red onion, ½ branch celery, ¼ green bell pepper, olive oil, 1 tsp cumin, black pepper and 2 tbsp chickpea flour. Chop and sauté ¼ onion in olive oil over high heat. Add the vegetables, then cover and sweat for 6 minutes over medium heat. Let cool, then mix all the ingredients together, except for the chickpea flour, until obtaining a purée with an even consistency. Add the flour and mix with a spoon. Oil and heat a pan. With wet hands, form 4 patties and brown them for 10 minutes on each side over medium heat. Toasted buns, sauce, lettuce… and now your veggie burger is ready to be enjoyed.
